Peanut Butter Fudge

This is the easiest Peanut Butter fudge I have ever made, and it turn out great. Just follow the easy direction and you will have a great fudge everyone will love.

2 cups sugar

1/2 cup milk

1 tsp. vanilla

3/4 cup peanut butter

Over a medium heat bring to a boil the sugar and the milk, once it starts to boil time it for 1 1/2 minutes remove from heat and add peanut butter and vanilla. Mix really well and pour into small pan that is greased lightly. Cool and enjoy.

Cocktail Meatballs

This is a great recipe for cocktail meatballs very quick and easy. Have made this real quick when need some thing fast for unexpected quests. I add some spices extra spices. But just as good this way.

1 lb. ground beef

2 T. minced onion

1 cup fine cornflakes crumbs

1 tsp. cornstarch

1/2 tsp. salt

1/4 tsp. pepper

1/8 tsp. allspice

1 cup milk

Oil for deep frying


Mix all the ingredients together except the oil, form into small balls. Then deep fry balls about 2 minutes. Drain on paper towel. Serve hot with toothpick.

Cottage Cheese Delight

Great recipe that dose not have all the calories, get the kids to snack on this instead of cookies.


1 quart cottage cheese

1 can crushed pineapples

1(6oz) box orange gelatin

1 small package miniature marshmallows

1 large container Cool Whip

Mix cottage cheese,pineapples and gelatin powder together. Blend in marshmallows and Cool Whip; chill before serving

Pie Without The Crust

This is a very easy pie to make. You dont need a crust just blend and bake.



2 cups milk
3 lg. eggs
1/2 cup sugar
1/2 cup flour
1/2 cup margarine
3/4 cup coconut
1 tsp. salt
Dash of salt
1 tsp. baking powder


Put all ingredients in a blender for 1 minute. Pour in 9 inch pie pan. Bake at 350 degrees for 45 minutes.

Baked Chicken and Rice

My Aunt Frances use to bring this yummy chicken recipe to all of our family gatherings. We all enjoyed my Aunt recipes.This baked chicken and rice recipe has always been a favorite. This was the only way the kids would eat rice (lol) .Hope you all enjoy it as much as we did.

4 cups diced cooked chicken
2 cans cream of chicken soup
1 cup mayonnaise
2 cups cooked rice
1 T. chopped onions
2T. lemon juice
1 cup crushed cornflakes
4 tsp. melted margarine


Mix all ingredients except cornflakes and margarine. Pour into 9x13 pan top with corn flakes and melted butter bake at 375 degrees for 45 minutes to an hour.

This can be frozen until needed jst dont put on corn flakes and butter till ready to bake .
