Spinach Salad

I was looking for a really good spinach salad recipe, I found this one and tried it out for a friend of mine who was coming to dinner this salad is so crispy and great tasting. This is the low calorie recipe but you could add boiled eggs and bacon. I think this one can measure up.

One eight ounce bag washed baby spinach
One cucumber
Two small tomatoes
Two stalks green onion or scallions
Three radishes
One half cup fat free cheddar cheese
One half cup fat free croutons
Four ounces fat free raspberry vinaigrette dressing

Peel the cucumber and cut into thin slices.
Cut the tomato into quarters.
Slice the radishes and scallions.
Mix all the vegetables together with the spinach in a large bowl.
Add the cheddar cheese.
Add the dressing and toss.
Top with croutons

Cocktail Meatballs

This is a great recipe for cocktail meatballs very quick and easy. Have made this real quick when need some thing fast for unexpected quests. I add some spices extra spices. But just as good this way.

1 lb. ground beef

2 T. minced onion

1 cup fine cornflakes crumbs

1 tsp. cornstarch

1/2 tsp. salt

1/4 tsp. pepper

1/8 tsp. allspice

1 cup milk

Oil for deep frying


Mix all the ingredients together except the oil, form into small balls. Then deep fry balls about 2 minutes. Drain on paper towel. Serve hot with toothpick.

Stuffed Cherry Tomatoes

This is a great finger food for all those graduation parties coming up. You could double the recipes with out any problems, also this is not going to cost a lot. This is a great recipe.

16 cherry tomatoes

1 can tuna in water

2 tablespoons low-fat yogurt

2 teaspoons finely chopped green onion

2 teaspoons chili sauce

1/4 teaspoons prepared horseradish

1/8 teaspoons ground black pepper

With a sharp knife, slice tops of tomatoes. With a grapefruit spoon remove pulp; drain upside down on papertowel.

Combine remaining ingredients, spoon mixture into tomatoes, refrigerate about 1 hour before serving.

Cottage Cheese Delight

Great recipe that dose not have all the calories, get the kids to snack on this instead of cookies.


1 quart cottage cheese

1 can crushed pineapples

1(6oz) box orange gelatin

1 small package miniature marshmallows

1 large container Cool Whip

Mix cottage cheese,pineapples and gelatin powder together. Blend in marshmallows and Cool Whip; chill before serving

Pie Without The Crust

This is a very easy pie to make. You dont need a crust just blend and bake.



2 cups milk
3 lg. eggs
1/2 cup sugar
1/2 cup flour
1/2 cup margarine
3/4 cup coconut
1 tsp. salt
Dash of salt
1 tsp. baking powder


Put all ingredients in a blender for 1 minute. Pour in 9 inch pie pan. Bake at 350 degrees for 45 minutes.

Apple Crisp

Apple dessert with a yummy cinnamon taste. That can be eaten warm.


8 to 10 apples, sliced
1 cup flour
1 cup sugar
1 tsp. baking powder
pinch of salt
1 egg
1/3 cup margarine
cinnamon


Place sliced apples in the bottom of 9x13 baking dish. Mix together flour,sugar,baking powder, salt, and egg till crumbly. Sprinkle over apples. Melt margarine and pour over mixture. sprinkle with cinnamon and bake at 350 degrees 40 to 45 minutes.

Broccoli and Cauliflower Salad

Low calorie if you use low fat mayonnaise, and fat free cheese. Great salad.


1 bunch broccoli (just the flowers)
1 head cauliflower
1 medium onion
4 oz. grated cheddar cheese
1 lb fried bacon


Mix with the following dressing:

1 cup mayonnaise
1/2 cup sugar
2T. vinegar

Combine all ingredients and cover with dressing.

Baked Chicken and Rice

My Aunt Frances use to bring this yummy chicken recipe to all of our family gatherings. We all enjoyed my Aunt recipes.This baked chicken and rice recipe has always been a favorite. This was the only way the kids would eat rice (lol) .Hope you all enjoy it as much as we did.

4 cups diced cooked chicken
2 cans cream of chicken soup
1 cup mayonnaise
2 cups cooked rice
1 T. chopped onions
2T. lemon juice
1 cup crushed cornflakes
4 tsp. melted margarine


Mix all ingredients except cornflakes and margarine. Pour into 9x13 pan top with corn flakes and melted butter bake at 375 degrees for 45 minutes to an hour.

This can be frozen until needed jst dont put on corn flakes and butter till ready to bake .

Mushroom Burgers

1 pound hamburger
1 tsp. salt
1/3 cup chopped onions
1/2 cup chopped fresh mushrooms
dash of tobasco


Mix all ingredients thoroughly. Form into four patties and broil until done to likeness.


This is a great way to make burgers.

Potato Chip Cookies

1 cup margarine
1/2 cup sugar
1 tsp. vanilla
1 cup crushed potato chips
1 cup all-purpose flour

Mix margarine,sugar, and vanilla together; blend well. Add potato chips and sift in flour. Form small balls and place on greased cookie sheet. Press balls flat with the bottom of a glass that has been dipped in sugar. Bake 16-18 minutes at 350 degrees. until lightly browned.

My Favorite Blueberry Muffins

2 cups sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup sugar
1 egg beaten
3/4 cup milk
3 T. melted margarine
1 cup fresh blueberries


Sift flour,baking powder,salt and sugar together. Add the eggs,milk and margarine. fold in blueberries. Fill greased muffin pans 2/3 full. Bake at 350 degrees for 20 minutes.

Glazed Sweet Potatoes

2 T. margarine
3/4 cup dark brown sugar
2 T. orange juice
1/2 cup walnuts
6 sweet potatoes (boiled)

Peel potatoes and slice lengthwise. Combine sugar, juice and butter. Bring to a boil. Layer potatoes in shallow baking dish. Cover with syrup. Bake 15 to 30 minutes or until heated through. Baste occasionally. Sprinkle with nuts.

This is a easy recipe to make any time.

Broccoli Casserole

3 sleeves of crushed Ritz crackers
2 sticks of margarine
4 small boxes frozen broccoli (chopped)
1 lb. box Velveeta Cheese

Cook broccoli for half the time stated on package. Drain well, and add 3/4 stick of margarine, 4 handfuls of crushed crackers and cheese cut into 1 inch cubes. Mix well and spread into greased baking dish. Melt remaining margarine and add to remaining crackers. pack lightly over broccoli mixture. Bake uncovered at 350 degrees for 30 minutes.

Snicker Doodles

1 cup shortening
1 1/2 cup sugar
2 eggs
2 3/4 cup flour
1 tsp. cream of tartar
1 tsp. salt
1 tsp. vanilla

Mix thoroughly sugar and shortening, add eggs. Sift in flour, cream of tartar, soda, salt and vanilla.
Chill dough for 1 hour. Roll into balls. Then roll in mixture of cinnamon and sugar and press down with a spoon. Bake at 400 degrees until golden brown.

Uncle John's Peanut Butter Bars

This is a family favorite!

1/4 cup margarine
1 1/2 cup flour
1/4 cup peanut butter
1 1/2 tsp. baking powder
1 1/3 cup brown sugar
1/2 cup chocolate chips
2 eggs
1/2 cup finely chopped nuts

Cream margarine,peanut butter together and add brown sugar and mix well.Add eggs until blended.Stir in dry ingredients, then and chocolate chips and nuts. Spread in a greased and flour 9 inch pan. Bake at 350 degrees for 30 to 35 minutes.Cool on pan and cut into squares.

Peanut Butter Cookies

These were always my grandmothers favorite peanut butter cookies.

1 cup peanut butter 2 tsp. vanilla
1 cup margarine 3 cups flour (sifted)
1 cup brown sugar 1/2 tsp. salt
2 eggs 1/2 tsp. cinnamon

Cream peanut butter and margarine together gradually add both sugars. Beat in eggs and vanilla. Sift together flour, salt and cinnamon. Stir into peanut butter mixture. Roll into 1 inch balls. Place on cookie sheet bake at 375 degrees for 8 to 10 min.

Hint: I always rolled the balls in sugar before baking them or you can use colored sprinkles.another fun thing to do is indent cookie with thumb and fill with jelly.

Shrimp Dip Recipe

A very quick and easy shrimp dip.
Serve with crackers.
recipe serves 8


* 1 (8 ounce) package cream cheese
* 1 (4 ounce) can small shrimp, drained
* 1/2 (12 ounce) bottle cocktail sauce


DIRECTIONS

1. Spread the cream cheese on the bottom of a 8 inch square serving dish. Layer the shrimp over the cream cheese. Pour the cocktail sauce over the top.

Yummy Cheese Ball

16oz. Cream Cheese( softened )
2 Cups Sharp Cheddar Cheese (shredded)
1 Tablespoon pimento (chopped)
1 Tablespoon onion (chopped)
1 Tablespoon green pepper(chopped)
2 Teaspoons Worcestershire sauce
1 Teaspoon lemon juice
Pecans(finely chopped)


Combine cream cheese and cheddar cheese, mixing until well blended.Add the remaining ingredients: mix well. Chill Shape into a ball :roll in pecans.
